Tangerine Chicken

Tangerine Chicken, also called Orange Chicken is an American Chinese dish of Hunan origin. The variety of orange chicken most commonly found at North American fast food restaurants consists of chopped, battered, and fried chicken pieces coated in a sweet orange-flavored chili sauce, which thickens or caramelizes to a glaze. While the dish is very popular in the United States, it is most often found as a variation of General Tso's Chicken rather than the dish found in mainland China.

陈皮鸡丁

陈皮鸡丁是一道美味可口的汉族名菜,属于川菜系。主要的材料有鸡丁,这道菜的特点鸡丁鲜嫩,汪卤包汁,富有桔皮香味,色发亮。鸡肉肉质细嫩,滋味鲜美,蛋白质含量较高,且易被人体吸收入利用,有增强体力,强壮身体的作用。

 

参考做法: 将鸡肉切成2厘米见方丁,又将陈皮洗净切块;将干红辣椒去蒂、去籽,切成1.5厘米长的节;葱切节,姜切片。然后,鸡丁加盐、料酒、姜、葱、酱油拌匀,腌1小时;  将锅内花生油烧至六成热,下鸡丁炸呈金黄色时捞出;倒去锅内的余油,下花椒炸出味后捞出不要,下陈皮、干辣椒,炸至棕红色,加姜、葱、蒜稍炒,然后下鸡丁,放料酒、酱油、白糖、味精、鸡汤(鸡汤要淹过鸡丁); 用小火烧至汁将干亮时,再淋醋和香油,拣去姜、葱、蒜不要,起锅晾凉,装盘即成。
