泼辣鱼有很多种不同的做法,各地均有其特色,但以重庆泼辣鱼最为出名,吃起来香酥嫩脆,麻辣爽口,回味无穷。
原料:新鲜鱼片,泡椒,干辣椒,花椒粒,生姜,豆瓣酱、葱、香菜、料酒、胡椒面、生抽各适量。
准备:葱姜切成细丝,香菜切小段,泡椒切碎。草鱼杀死,处理干净后沥净水分,片成鱼片备用。
操作步骤:第一步:烧一锅开水,水中放入适量白胡椒、盐、葱丝和姜丝。烧开后放入鱼片,大火烧开后马上关火,盖上锅子焖3~5分钟左右,这样做可保持鱼肉的鲜嫩。第二步:把焖好的鱼片捞出,控净水分后装入碗中。还可以利用焖鱼的汤烫点芽菜,与鱼片放在一起。第三步:先把锅烧热,然后倒油,烧热后先放入干辣椒炸到稍微鼓起,再放入花椒粒、姜丝、葱丝炸出香气。第四步:放入泡椒、豆瓣酱煸炒至出红油,再加入料酒和适量水煮开,加适量水淀粉勾芡,趁热浇在鱼片上,撒点香菜碎或葱叶碎即可上桌。
